Mrs. Fred Bamba's Young Coconut Pie

3 cups young coconut, chopped...use juice too
4 cups water
1/4 lb butter or margarine
1 1/4 cups sugar
1/2 teaspoon salt
2 cans (large) Carnation´┐Ż milk
6 egg yolks
1/2 box cornstarch
2 Tbs vanilla
1 Tbs rum

Combine coconut, water, butter, sugar and salt in a saucepan and boil for several minutes. Add canned milk and bring to a boil again. Combine egg yolks, corn starch, vanilla and rum in a bowl. Mix and add to mixture in saucepan. Stir carefully until mixture thickens. Pour into pre-baked pie shells and allow to cool. Sprinkle a few flakes of coconut over the top of each pie for a festive appearance.

Yield: Filling for 6 Pies
