Biscotti


3/4 cup oil
1 cup sugar
3 eggs

Beat the above together, then add:
1 tsp vanilla
1 tsp lemon juice


Combine the following dry ingredients, then stir into the above mixture:
3 cups flour
1/2 tsp baking powder
1/2 tsp salt


Refrigerate the above mixture. (That makes it easier to handle.) When ready to bake, preheat oven to 350F. Divide the mixture in half and roll into log on counter top sprinkled with cinnamon-sugar. Put both logs (about 14 inches long) onto cookie sheet that has been lined with foil or parchment paper. Bake for 25 minutes. Remove from oven and cool briefly. Slice logs on diagonal about 1/2 inch thick and place on cookie sheets, sliced side up. Bake at 375 for an additional 10 minutes, shifting sheets top to bottom and back to front halfway through baking time so browning will be even on top and bottom. Turn off the oven and leave the cookie sheets in the oven with the door open to have the cookies dry out a little more.

Yield: About 4 1/2 Dozen Biscuits
