Turkey Breast in Kiwi Fruit and Sherry Cream


1 lb turkey breast fillet
white pepper
zest of 1 lime, grated
3 kiwi fruit
2 Tbs butter
salt
1 tsp green peppercorns
generous pinch ground ginger
1 or 2 Tbs sherry

Slice turkey thinly. Season with pepper and lime. Peel kiwi fruit and slice thinly. Into large frying pan place the butter, add turkey and cook through, turning once. You may need a little more butter. Remove meat and keep warm. Add cream and salt to taste, crushed peppercorns, ginger and sherry; cook until lightly thickened. Add Kiwi fruit and heat through. Add turkey and coat with sauce. Serve with white fluffy rice.

Yield: 4 Servings
