Spiced Mango Chicken
This dish takes little cooking and the preparation can be done in advance making it ideal for a dinner party.

1 1/2 cups plain yogurt
2 Tbs ground coriander
2 tsps finely chopped fresh ginger
2 tsps salt
2 tsps turmeric
1/2 tsp black pepper
8 boneless chicken breasts

Combine first six ingredients in a large bowl, add the chicken breasts. Marinate in the refrigerator for at least 2 hours and up to overnight.

1/2 cup butter (1 stick)
2 small onions, finely chopped
8 cardamom pods
2 cinnamon sticks
1 cup water
16 slices mango

Melt 4 Tbs of the butter in a large skillet. Saute onions, cardamom pods and cinnamon sticks for 5 minutes or until onions are soft and golden. Add water and stir well. Remove as much yogurt marinade as possible from chicken breasts and reserve. Place chicken in a baking dish and spoon a little of the onion mixture on top of each breast (reserve the liquid to make the sauce). Place 2 slices of mango on each breast and dot with remaining butter. Bake in a 400F oven for 10 minutes. Spoon reserved yogurt marinade over chicken and continue cooking for about 10 more minutes. Remove cardamom pods and cinnamon sticks from sauce, bring to boil and spoon over chicken before serving.

Yield: 8 servings
