Monkey Rolls (Fresh Banana Lumpia)
Peter Duenas, Executive Chef, Sam Choy's Guam

1 pkg rice paper (hydrated)
1 bunch of ripe bananas
1/2 cup chocolate syrup
1 pinch of cayenne pepper ground
1 Tbs peanut butter
2 Tbs coconut syrup

Dry Mix
1/2 cup chopped peanuts
1/2 cup toasted coconut
1 Tbs fresh chopped mint

Combine all dry ingredients in a small mixing bowl and set aside. In a separate mixing bowl, combine chocolate, cayenne, and peanut butter. Blend until smooth. Peel and slice bananas into halves length wise. Place each half onto rice paper. Drizzle sauce on the banana and sprinkle dry mixture atop. Then seal each as if you were making a burrito or spring roll. Chill and drizzle coconut syrup to serve.

Yield: 4 to 6 Servings
