Exceptional Rice Pudding


This recipe has been designated a Guam Diner Favorite!

This pudding is creamy and delicious, just like your Grandmother's, but it has a modern twist to the flavors.

3 cups cooked rice (cold and a day or two old is best)
3 cups milk (use whole if you want that creamy texture)
2 Tbs butter
1 tsp salt
1/2 cup golden raisins
2 to 3 whole cloves
2 tsps cinnamon
1 tsp nutmeg
1 tsp vanilla
Zest of 1 orange


Combine the rice, milk, butter, salt, raisins and cloves in a heavy saucepan over medium heat. Cook until creamy and thick, about 25 minutes. Remove from heat and stir in the cinnamon, nutmeg, vanilla and orange zest. Remove cloves. Let cool. Can be served warm or can be stored in the refrigerator. Bring to room temperature before serving.

Yield: 4 to 6 servings.
