Mango or Papaya Sorbet
This makes an excellent dessert after curry or highly spiced foods.

1 large ripe mango or papaya, peeled, halved and seeded
1 - 3 Tbs lemon juice
1 egg white
2 Tbs white sugar

Chop fruit flesh roughly and blend, a few pieces at a time, or push through a sieve, to make a thick, smooth puree. Combine with lemon juice to taste and pour into chilled 8 x 8 dish. Freeze until just starting to set around edges. Whisk egg white until stiff and gradually beat in sugar. Turn papaya mixture into chilled bowl and beat until smooth. Fold in egg white. Return to chilled dish, cover with foil and freeze until firm. Transfer to refrigerator 15 minutes before serving.

Yield: 6 to 8 Servings
