Island Style Poke
Kotwal Singh, Regional Executive Chef, Hard Rock Cafe Micronesia

8 ozs fresh Tuna, diced small cut
1/8 tsp kosher salt
1/8 tsp chopped peanut nut
1/2 tsp brown sugar
Pinch chili flakes
1 tsp Kikkoman soy sauce
1 tsp sesame oil
1 tsp green onion, chopped
1 tsp garlic, chopped
1 Tbs Furukake
1 tsp toasted sesame seeds

Combine all ingredients in a stainless steel bowl and gently mix. Make this on the day of use. Serve fresh. You can try this recipe at Hard Rock Cafe Saipan and Guam every Friday at the Happy Hour Pupu Buffet.

Yield: 2 servings
