Simple Crostini

A simple crostini in the spirit of southern Italy requires little more than good bread, crumbled feta cheese, some fresh herbs like thyme or oregano, sun-dried tomato, a clove of garlic and your favorite olive oil. Drizzle each slice of bread with olive oil and season it with salt and pepper. After toasting to a golden brown, gently rub each slice of bread with the garlic. Thinly slice the sun-dried tomatoes and fresh herbs and then add them to a mixing bowl with the feta and a small amount of olive oil. Top the crostini with a small amount of the mixture and bake in a preheated hot oven for about 3 to 5 minutes. Yum!
