SPAM™ Ginger & Scallion Steamed Dumplings
Amy Hollingsworth's 1st Place recipe in the Great Island Style SPAM™ Cook-Off 2003. Only 1 point separated this recipe from the Grand Prize. A truly unique and tasty dish.


Filling

1 12-oz can Turkey SPAM®, grated
1 1-oz package dried shitake mushrooms, soaked according to package directions, finely chopped
1 8-oz can water chestnuts, finely chopped
3/4 cup fresh cilantro leaves, finely chopped
1/2 cup scallions (approx. 6), finely chopped
3 Tbs fresh ginger, grated
2 Tbs soy sauce
1 14-oz package of wonton skins


Mix first 7 ingredients in a medium bowl until well combined. Place 1 tsp of mixture in center of wonton skin. Moisten two edges of wonton skin with water and fold the opposite two edges over to form a triangle. Press firmly with fingers to seal. Repeat until all the dumplings are made.

Steam the dumplings in a steamer basket or over a pot of boling water for 10 minutes working in small batches to prevent them from sticking to each other.

Serve warm with sesame dipping sauce.

Sesame Dipping Sauce

4 Tbs soy sauce
3 Tbs rice wine vinegar
1 Tbs sesame oil
1 1/2 tsp fresh ginger, grated
1 1/2 tsp scallions, finely chopped


Combine all ingredients in a small bowl. Serve with dumplings.

Yield: Approximately 50 dumplings
