French Toast with Homemade Cinnamon-Nutmeg Syrup

1/2 cup sugar
1/2 cup water
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg

Stir all ingredients in a small heavy saucepan over low heat until sugar dissolves completely. Increase the heat and boil gently until it thickens slightly, about 3-5 minutes. Cool and set aside. When ready to serve bring to a simmer and pour over toast. This can be made in advance and stored in the refrigerator.

Yield: Approximately 1/2 cup

French Toast

1/2 milk
2 large eggs
1 1/2 tsps sugar
1/2 tsp ground cinnamon
pinch of ground nutmeg
4 1-inch thick slices of day-old French bread (regular white bread can be substituted)
2 Tbs butter for cooking

Whisk first 4 ingredients in flat glass baking dish pan (a pie pan will work also) until well blended. Place the bread slices in the mixture and soak for approximately 1 minute on each side. Use tongs to turn the bread over so as not to puncture the bread which will have softened.

Melt butter in a heavy large skillet over medium high heat. Add bread to skillet and cook until golden brown, about 2-3 minutes per side. Transfer to plates. Pour warmed syrup over.

Yield: 2 servings. Recipe may be doubled or tripled as desired.
