Island Citrus Shish-Ka-Bobs

1/4 cup fresh squeezed juice mix (orange & lime is nice)
1-2 cloves garlic, crushed
1 Tbs herb (thyme, basil or lemon grass)
1 lb uncooked shrimp and/or cubed fish
veggies & fruits such as bell peppers, cherry tomatoes, mushrooms, red onion, firm mango, papaya, etc.

Mix juice, garlic & herbs in a large zip lock bag. Marinate shrimp/fish in the liquid at least 1 hour and overnight if possible.

Start grill or preheat oven to 400. Cut fish, veggies & fruit into 1/2" to 1" squares. Skewer shrimp (about 4-6 per skewer, depending on size) alternating with other items. Grill or broil on foil, turning at least once, until shrimp is cooked. Serve on brown rice or roll up in a sprout or whole wheat tortilla with salsa.

Yield: 4-6 Servings
