Traditional Style Chicken Kelaguen

15 lbs whole chicken fryers
5 bunches green onion, finely chopped
2 lbs yellow onions, finely diced
Donne pepper, to taste
Sea salt, to taste
Preheat oven to 350F. Bake whole chickens until done.
While chicken is baking, prepare onions, hot peppers, squeeze lemon and lime juice and set aside. Remove chicken for the oven and let cool. Remove meat from the chicken and chop into small pieces. Combine all ingredients. Season with salt and hot pepper as desired.
Yield: Enough for a small fiesta. Recipe can be scaled up or down as desired.
