Chef Chito's Chicken Kelaguen
Chito Iglopas, Executive Chef, Planet Hollywood Guam

4 lbs chicken thighs, boneless
1/2 cup fresh lemon juice
1 cup fresh grated coconut
1/2 cup yellow onion, chopped
1/2 cup greens onions, chopped
8 donne peppers, chopped (use more or less as desired)
1 1/2 Tbs salt
1 Tbs ground pepper

Grill chicken thighs until done; set aside to cool. Prepare the other ingredients. Chop the chicken thighs and mix all ingredients in a large non-reactive bowl. Refrigerate.

Yield: 6 - 8 cups
