Spicy SPAM™ Balls with Peach Sauce
Ben Torres, Grand Prize Winner, 2004 Great Island Style SPAM™ Cookoff


1 can Hot & Spicy SPAM™, minced
1/2 cup uncooked rice
6 ozs medium raw shrimp, minced
2/3 cup green onions, chopped
2/3 cup water chestnuts, chopped
3 Tbs Kikkoman™ Soy Sauce
1 Tbs dry sherry
2 -3 garlic cloves, minced
Salt & Pepper
3 - 4 Tbs cornstarch (enough to coat balls)
Vegetable oil for frying

1 can peaches
3 Tbs Kikkoman™ Teriyaki Sauce
1 Tbs cornstarch
1 Tbs sugar
1/4 tsp fennel, crushes
1/4 tsp ground black pepper
1/8 tsp ground cloves

Cover rice with warm water and let stand 20 minutes; drain. Meanwhile, peel, devein and mince shrimp. Combine shrimp with SPAM™, green onions, soy sauce, sherry, garlic and rice; add salt & pepper to taste; mix well. Divide into equal portions; shape portions into balls. Roll balls in a bed of corn starch to cover. Meanwhile, heat vegetable oil in large frying pan and fry SPAM™ balls. Remove when evenly browned on the outside and set on paper towels to drain and cool. Serve with warm peach sauce.

Place slices of peach in blender container. Process on high speed until smooth; pour into small saucepan and add remaining ingredients. Bring mixture to boil over medium heat stirring constantly. Reduce heat and continue stirring until sauce thickens, about 2 minutes. This makes about a cup.
