Hot Artichoke Dip

1 1/2 cups marinated artichoke hearts, VERY well drained
1 cup of FRESHLY GRATED Parmesan cheese (or 1/2 cup parmesan, 1/2 cup Asiago, always freshly grated)
1 cup mayonnaise
1 tsp of lemon juice
1 tsp grated black pepper
1 medium to large onion, minced very finely, or chopped finely with a food processor
1/2 cup Italian Bread crumbs

Preheat oven to 400F. Using a food processor or blender, chop the artichoke hearts until it forms a thick paste. In a large mixing bowl combine the artichoke hearts, onion, pepper, lemon, grated cheese, and mayonnaise. Stir very well.

Spread mixture into a stoneware or enameled cast iron baking dish (several small au gratin dishes work very well for large parties). Sprinkle bread crumbs evenly over the top and bake at 400F for 30 to 40 minutes, or until the dip is bubbling evenly throughout. Remove from oven and serve while hot with French bread or bread sticks.

Yield: 4 to 6 Servings
