SPAM™ Quiche

1 small tomato
1 can (12 oz) SPAM® Luncheon Meat
2 medium potatoes
1/2 cup chopped green onions
1/2 cup chopped red onions
1/2 tsp black pepper
3/4 tsp Italian salad dressing mix
3/4 tsp hot pepper sauce
1 cup grated cheddar cheese
3 eggs
1 cup milk
1/2 cup buttermilk baking mix

1 small tomato
1 can (12 oz) SPAM® Luncheon Meat
2 medium potatoes
1/2 cup chopped green onions
1/2 cup chopped red onions
1/2 tsp black pepper
3/4 tsp Italian salad dressing mix
3/4 tsp hot pepper sauce
1 cup grated cheddar cheese
3 eggs
1 cup milk
1/2 cup buttermilk baking mix

Preheat oven to 400F. Slice the tomato into small wedges and set aside. Cut SPAM® into 1/4-inch cubes. Peel potatoes and cut into 1/4-inch cubes. Place green onions, red onions, SPAM® and potatoes into large frying pan. Stir in black pepper and salad dressing mix. Cook over medium high heat for 10 minutes, stirring frequently. Stir in hot pepper sauce. Spread into a greased 9-inch pie pan. Mix grated cheese, eggs, milk and buttermilk baking mix in large mixing bowl. Pour into the pie pan. Bake 20 minutes, or until set in center. Remove from oven and place tomatoes on top. Bake for an additonal 2 minutes or until tomatoes are warmed through. Cut into wedges and serve.
