SPAM™ Stuffed 'Shrooms

The Great SPAM™ Cook-Off Island Style 2000

1 can (12 oz) SPAM® Less Sodium Luncheon Meat
2 pkgs (8 oz) white mushrooms
1 pkg (8 oz) light cream cheese
2 green onions, thinly sliced
4 Tbs breadcrumbs
1/2 cup butter

Heat oven to 350F. Slice SPAM® into thin slices. Dice 3 slices and reserve for topping. In nonstick skillet, brown remaining slices on both sides. Let cool, dice and set 1/4 cup aside. In a bowl, combine remaining diced, browned SPAM® with cream cheese, green onions and breadcrumbs. Melt butter in small saucepan. Clean mushrooms and remove stems. Dip caps into melted butter and place in oven proof baking dish. Sprinkle reserved diced, browned SPAM® into bottom of caps, spoon in cream cheese mixture, then top with the "uncooked" diced SPAM®. Bake for 30 minutes.
