Liam Neeson's Irish Stew

1 oz butter
2 lbs lamb or beef, cubed
1 large onion, coarsely chopped
2 carrots, chopped
1 Tbs flour, optional
1/2 pint beef stock
2 Tbs tomato puree
1/2 Tbs sugar
1 bottle Guinness or large glass red wine (Guinness is better)
1 bouquet garni (sprig of parsley, sprig of thyme and 1 bay leaf tied up)
2 lbs cubed potatoes
salt & pepper

Melt the butter in a large pan & fry meat on all sides till browned, do not crowd pan, do in batches if necessary, remove the meat from pan add the onion & carrots & cook till slightly softened. Return meat to pan & add flour if using, stir in stock, tomato puree & sugar, bring to a boil , reduce hear & simmer. Add potatoes, Guinness & bouquet garni, salt & pepper to taste, cook on low heat for 1 1/2 hours or till meat is tender. While simmering add 4-5 drops Tabasco.

Yield: 4 to 6 Servings
