  Cranberry Fruit Nut Bread
The basic recipe is found on the back of the Ocean Spray Cranberry package. This version has been modified for additional flavor. This bread is beautiful and appropriate for gift giving. It also makes wonderful toast.

1 cup fresh or frozen cranberries, coarsely chopped
1/2 cup chopped nuts
1 Tbs grated orange peel
1 tsp cinnamon
1/2 tsp nutmeg
1 clove
2 cups all purpose flour
1 cup sugar
1 1/2 tsps baking powder
1 tsp salt
1/2 tsp baking soda
2 Tbs shortening
3/4 cup orange juice
1 egg, well beaten

Preheat oven to 350F. Generously grease and lightly flour a 9x5x3 loaf pan. Combine cranberries, nuts, orange peel, cinnamon, nutmeg and clove in a bowl and set aside. In another bowl mix together flour, sugar, baking powder, salt and soda. Cut in shortening. Stir in orange juice and egg, mixing just enough to moisten. Remove clove from cranberry mixture. Fold cranberry mixture into other ingredients. Spoon into prepared pan. Bake 60 minutes or until wooden toothpick inserted in center comes out clean. Cool on rack for 10 minutes. Remove from pan, cool completely. Wrap and store.

Yield: 1 loaf
