  Ginger Peanut Chicken
An easy microwave dish.

2 boneless, skinless chicken breasts, cut into bite size pieces
1 Tbs butter
1 1/2 cups fresh broccoli, cut in 1 inch pieces
1/2 cup green onions, cut in 1 inch pieces
1/2 cup celery, cut in 1 inch pieces
3 slices fresh ginger root
2 Tbs cornstarch
1/2 cup water
1 Tbs soy sauce
1/4 tsp lemon pepper
1/8 tsp garlic salt
1/3 cup dry roasted peanuts

Melt butter in a casserole dish. Coat chicken with butter. Cover and cook on high in the microwave oven for 4 minutes, stirring half way through. Add broccoli, onions, celery and ginger root. Cook on high for 2 minutes. Combine corn starch, water, soy sauce, garlic salt and lemon pepper. Stir well. Pour over chicken, cover and cook on high for 2 to 3 minutes, stirring once. Add peanuts, remove ginger root and serve over rice.

Yield: 4 to 6 Servings
