  Bean Sprout Salad

For the dressing:
2 Tbs rice wine vinegar
2 Tbs lemon juice
2 Tbs vegetable oil
2 Tbs soy sauce
1 tsp dark sesame oil
1 tsp sugar


For the salad:
3 - 4 cups assorted salad greens
1 - 2 cups fresh bean sprouts
1/2 cup thinly sliced water chestnuts
1/4 cup roasted peanuts, coarsely chopped
Fresh cilantro (coriander leaves) for garnish


Whisk together the dressing ingredients. Place the salad greens, bean sprouts, and water chestnuts in a large bowl and toss with the dressing. Sprinkle with chopped peanuts and garnish with cilantro.
