  Carrot Salad

4 large carrots, grated
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup raisins
1/2 cup coarsely chopped pecans or walnuts
1 Tbs lemon juice
2 tsp grated lemon peel
Salt and freshly ground pepper to taste

Combine all ingredients and toss to combine. Serve chilled.

Yield: 4 to 6 Servings
