  Cheese Balls Florentine

1 cup cooked spinach, drained and chopped very fine
2 eggs, beaten
2 cups bread crumbs
1 small shallot, chopped fine
1/2 cup grated cheese
Salt and pepper to taste

Combine all ingredients except for 1/2 cup bread crumbs. Form mixture into 1 to 1 1/2 inch balls and coat with additional bread crumbs. Deep fry in 375 degree oil until brown and crisp. Serve with Marinara sauce, or your favorite mustard.
