Chunky Lumpia

1/2 lb pork, cut into thin strips (you can use shrimp, chicken strips, fish, or if you want to make this for a vegetarian feast, omit the meat)
1 green bell pepper, cut into strips
1 can (5 oz) tomato sauce
2 medium onion, sliced
1/4 tsp minced ginger
1 stalk celery, sliced
1 1/2 tsp chili powder (omit if you don't want it to be so spicy)
1 lb squash, cut into strips
18 pcs medium lumpia wrappers

Combine all ingredients except squash and lumpia wrapper. Season with 1/2 tsp iodized salt (or 1 1/2 tsp rock salt) and 1/4 tsp pepper. Let stand for 30 minutes. Saute in 2 Tbs oil over high heat for 10 minutes. Add squash, then continue stirring over low heat until squash is almost done. Wrap 1 heaping tablespoon of meat-squash mixture in a lumpia wrapper. Fry in oil until golden brown. Drain on paper towels.
