  Baked Herbed Rice

3 Tbs butter or olive oil
1 small onion, chopped
1 cup long-grain rice
2 cups hot chicken, beef or vegetable broth
2 Tbs chopped fresh chives or 2 tsp dried
1 Tbs chopped fresh tarragon or 1 tsp dried
salt and freshly ground pepper to taste

Heat the butter in a saute pan and saute the onion until tender but not brown, about 5 minutes. Add the rice and stir to coat the rice well. Add the remaining ingredients, cover tightly, and bake in a preheated 375F oven for 25 minutes.

Yield: 4 to 6 Servings
