Dorothy's Kitchen

1 medium size fish, cleaned
1 clove garlic, minced
1 large onion, sliced lengthwise
1/4 cup chopped fresh ginger
2 cups green papaya, chopped
1 green bell pepper
1/3 cup vinegar
1 cup water
2 Tbs soy sauce
2 fresh tomatoes, sliced
3 green onions, chopped with tops
1 Tbs cornstarch

Sprinkle cleaned fish with salt inside and out. Let stand for 10 minutes. Bake or grill fish until meat is soft. Set aside to keep warm while you prepare sauce.

Fry garlic, and onions until onions are soft. Add papaya or peppers and cook another 10 minutes on medium heat. Add vinegar, water and soy sauce. Bring to boil. Add conrstarch that has been added to cold water. Stir in and allow sauce to thicken. Spoon over warm fish, return to warm oven and allow to stand in warm oven for about 5 minutes to allow the flavors to penetrate the fish. Serve with hot rice.
