  Pepper Shrimp

24 large shrimp or prawn
1 large bell pepper, diced in 1-inch cubes
1 large onion (quartered)
1 small carrot (sliced into circles)
4 cloves garlic (minced or chopped)
2 pimientos or jalapenos (chopped)
1 habanero or scotch bonnet (quartered) or 1 1/2 Tbs hot sauce
1 cup tomato ketchup
1 tsp soy sauce
1 tsp sesame oil
1/2 tsp of Chinese salt or Vet-sin
1 tsp cooking oil
2 Tbs chopped chives or spring onions

Peel and devein shrimp, leave tails on. Sprinkle with 1/4 tsp Chinese salt, 1/2 tsp soy sauce and set aside. Heat cooking oil in a wok or deep skillet! Add onions, garlic, bell pepper, carrots, jalapenos, scotch bonnet/habanero and tomato ketchup. This must be stirred constantly so it won't burn, you may add a little water also or turn down the heat a bit. Throw in the rest of the soy sauce and Chinese salt. Turn off the stove, throw in the shrimp, add the sesame oil and stir one time. Garnish with chopped chives or spring onions, they also lend wonderful aroma and flavour!

Serve with steamed rice or Chinese noodles.
