||Grilled Blue Marlin with Marsala Cream Sauce

The sauce works equally well with other fish and chicken.
4 blue marlin steaks, 4 to 6 ozs each
1/2 cup molasses
1/2 cup salad oil
1 tsp chopped garlic
Combine the molasses, oil and garlic and marinade the fish no more than 1 hour.
1 cup Marsala wine
1 tsp oregano
1/2 tsp basil
1/4 tsp Dijon mustard
1/4 cup sliced fresh mushrooms
1/4 cup diced red onions
1/4 cup diced green onions
1 1/2 cups heavy cream
Combine all ingredients for sauce in a small heavy sauce pan. Use medium-high heat until the sauce boils then reduce to low and simmer until mixture is reduced by half, about 30 minutes.
Grill marlin until done. Grilling time will depend on how you like your fish. Arrange on a plate and top with sauce.
Yield: 4 servings
