Pork Chops Salmoriglio

1/2 cup extra virgin olive oil
2 Tbs finely chopped fresh oregano
2 Tbs finely chopped fresh thyme
2 Tbs lemon juice
1 Tbs grated lemon zest
salt and freshly ground pepper to taste
4 to 6 pork chops, about 3/4-inch thick

Combine the oil, herbs, juice, zest, salt, and pepper in an electric blender or food processor and process until the sauce is emulsified. Season the pork chops with salt and pepper and grill or broil until done, about 5 to 7 minutes per side. Spoon the sauce over the chops, or serve it on the side for diners to help themselves.
