  Angel Hair Pasta with Smoked Salmon in Tomato-Herb Sauce

6 ozs Smoked salmon, thinly sliced
3 Tbs Olive oil
1 large Garlic clove, minced
2 1/2 cups Fresh tomatoes, seeded, chopped and divided
1/2 cup Dry white wine
3 Tbs large Capers, drained and rinsed
1 1/2 tsps Dill weed
1 1/2 tsps Dried basil
8 ozs Angel hair pasta
1/2 cup Parmesan cheese, grated
Chopped parsley for garnish, optional

Cut smoked salmon with the grain into 1/2" wide strips and set aside. Using medium high heat in a large skillet, heat olive oil. Add garlic and cook about 1 minute stirring until golden. Add 2 cups of the tomatoes, wine, capers, dill weed and basil. Stir and cook until mixture is hot.

Meanwhile cook pasta according to package directions. Drain pasta; place in large serving bowl and toss with tomato mixture. Add salmon and cheese; toss gently. Garnish with remaining tomatoes and parsley.
