||Lamb Chops Provencal
Lamb can be found at Cost-U-Less and often at the Pay-Less Supermarket in Hagatna.
4 lamb loin chops
4 thick slices of French bread
1 onion, finely chopped
1 clove garlic, crushed
2 Tbs parsley, chopped or dried
3 Tbs hot water
1 cup dry white wine
Grill chops over charcoal or under a broiler for about 4 minutes on each side. This will give meat that is well browned but still pink in the center. Grill or broil for a few minutes longer if you like your chops well done.
Meantime, lightly fry bread in a little olive oil, drain on paper towels then keep warm. Heat 2 Tbs olive oil in pan adding onion, garlic and parsley. Cook until onion is golden brown. Add water, wine salt and pepper and simmer for 5 minutes.
Arrange the fried bread on heated plates, place a lamb chop on each piece and spoon sauce over. Sprinkle with a little chopped parsley and serve immediately.
