  Pineapple Salsa
Clayton Babas, Chef, Bistro at P.I.C.

1/2 cup fresh pineapple, diced
1/4 cup yellow onion, minced
1/4 cup bell pepper, minced
1 tsp garlic, minced
1/2 tsp local chili pepper paste
1 Tbs granulated sugar
1/4 tsp salt

Combine all ingredients in a bowl and lightly toss to evenly mix. Adjust salt, sugar and chili pepper to taste. Cover and refrigerate for 4 hours or overnight, to allow flavors to fully develop.

Yield: Approximately 1 cup (can easily be doubled or tripled)
