Avocado and Goat Cheese Sandwiches

1 large ripe avocado, peeled, pitted, and roughly chopped
1 clove garlic, finely chopped
1 Tbs lemon juice
salt and freshly ground pepper to taste
1 French baguette cut into 4-inch lengths and split, or 4 to 6 crusty rolls, split
4 to 6 oz goat cheese
1 to 2 ripe tomatoes, sliced

Mix together the avocado, garlic, lemon juice, salt, and pepper. Spread the avocado mixture on one side of the bread. Spread the goat cheese on the other side, and place the tomato slices in between.

Yield: 4 to 6 Servings
