Banana Nut Muffins

3 cups whole wheat pastry flour
3 Tsp Ener-G baking powder
1 tsp salt
2 cups mashed bananas
1/3 cup honey plus 2 tbs water
1 tsp vanilla
1/2 cup chopped walnuts, more to sprinkle on top
1/4 tsp maple flavoring

Place flour, baking powder and salt in a bowl and mix together. In a separate bowl, mix together the remaining ingredients and then stir in the dry mix. Spoon into muffin tins (a 1/2 cup ice cream scoop is great for this), and sprinkle top with chopped walnuts. Bake at 325 for 30 minutes, or until top is golden brown and center is done.
