  Black Bean & Rice Burgers

olive oil spray
cornmeal for dusting
1 can (15 oz) black beans, drained
1/2 cup cooked brown rice
1/2 cup corn kernels
1/2 cup sunflower seeds, coarsely ground
1/4 cup cornmeal
1/4 cup wheat germ
1/2 cup celery, chopped
1 Tbs oil (canola, flaxseed or olive)
1/2 cup salsa (Click here for Salsa Cruda recipe)
1 Tbs chili powder (optional)
1 Tbs cilantro, chopped

Preheat oven to 375F. Pan spray a 14" X 16" cookie sheet and dust with cornmeal. In a large bowl combine all ingredients and mix thoroughly. Let the mixture stand for 15 minutes. Divide and form into 8 patties using wax paper and place on baking sheet. Bake 30 to 35 minutes or until browned and firm.

Serve all above Burgers as you would traditional ones with fat free condiments such as ketchup, mustard, lettuce, tomato, red onion, pickles, etc.
