  Famous Indian Chicken Curry

5 lbs chicken thighs and legs
4 large onions, chopped
2 large cloves garlic, minced
1 inch ginger, minced
1 lb cherry tomatoes, chopped
2 Tbs cilantro, chopped (for garnish)
4 spring onions (green onions), chopped
2 1/2 tsp salt
3/4 tsp crushed red pepper
3/4 tsp garam masala (available locally at Nuts & Grains)
1/2 tsp ground cumin
1/2 tsp chicken masala (available locally at Nuts & Grains)
3 Tbs olive or vegetable oil

Put oil, garlic, ginger in a pot. Add onions, saute until fairly brown, then add tomatoes and rest of dry ingredients. Finally, add chicken parts. Cook on Medium heat for 30 minutes or until cooked. Garnish with spring onions and cilantro. Serve hot with rice or pita bread.

May be spicy for some people!

Yield: 5 to 6 Servings
