  Baked Tofu with Asian Spices

1 lb firm tofu
1 cup vegetable stock
1/4 cup low sodium soy sauce
2 Tbs toasted sesame oil
1 Tbs garlic, minced
1 Tbs ginger, minced
1 Tbs Parkelp Granular Seasoning*
1/2 tsp Chinese five-spice, Mrs. Dash, Spike, etc.

*Parkelp granular seasoning available at Nuts & Grains.

To extract excess water from the tofu, first wrap the block of tofu in a clean, lint-free towel and place it in a colander over the sink. Place a plate over the towel-covered tofu, then place a heavy can or other weight on top of the plate and leave to press for 30 minutes. Remove the tofu from the towel and cut into 1/2-inch thick slices.

Preheat oven to 350F. Lightly oil (or spray with oil) a 9 x 13-inch baking pan. Place the tofu slices in a single layer and set aside. In a small bowl, whisk together the remaining ingredients, and pour the mixture over the tofu slices. Let marinate for 30 minutes, turning once after 15 minutes.

Place in oven and bake for 15 minutes. Remove from the oven and carefully turn the tofu slices. Return to oven and bake for an additional 10-15 minutes or until all of the liquid has been absorbed.

Yield: 8 to 9 slices
