Peach Raspberry Champagne Cocktail

3 ripe peaches, stoned and quartered
8 oz fresh raspberries, reserve a few for garnish
Granulated sugar
3 tbsp raspberry or peach liqueur (Chambord or Peach Schnapps)
Champagne or sparkling wine, chilled

Using a food processor, puree the fruit until it is smooth. Taste and adjust by adding sugar if needed. Push the berry puree through a fine plastic sieve into a small bowl. Stir in the raspberry or peach liqueur. Put in a glass container and chill for a few hours.
When you are ready to serve, pour some of the fruit puree into the bottom of champagne flute, carefully pour in the Champagne and gently stir. Garnish with raspberries.

Makes about 6 -8 cocktails.
