  SPAM™ Sweet & Sour

The Great SPAM™ Cook-Off Island Style 2000



1 cup tempura mix (1/2 cup flour and 1/2 cup cornstarch)
1 can (12 oz) SPAM® Hot & Spicy
1 medium onion, sliced into 1-inch pieces (about 1 cup)
1 large green bell pepper, sliced inot 1-inch pieces (about 1 cup)
1 cup carrots, sliced
1 cup button mushrooms
1 cup ketchup
1/2 cup cider vinegar
1 1/2 cups brown sugar
1/2 tsp minced garlic
1/2 tsp ginger
1 cup pineapple
1 1/2 cups water
2 Tbs cornstarch
hot pepper sauce

Pour tempura mix into small bowl and add water in small portions until pancake batter consistency is reached. Season with salt and pepper. Slice SPAM® into 1/2-inch to 1-inch cubes then place into batter mix. Heat oil in frying pan/wok and fry SPAM® pieces until golden brown, remove from oil. Stir-fry onions, bell peppers, carrots and mushrooms for one minute or until vegetable are translucent. Remove from pan. Combine ketchup, vinegar, brown sugar, minced garlic and ginger into frying pan/wok and bring to a boil. Add pineapple chunks. Combine 1 cup water and constarch and add to sacuce mixture stirring constantly. Bring sauce to boil; boil for 1 minute. Remove sauce from heat and pour over SPAM® and vegetables. if desired season with hot pepper sauce.
