  Quick & Spicy SPAM™ Casserole

The Great SPAM™ Cook-Off Island Style 2000



1/2 can (12 oz) SPAM® Hot & Spicy, cut into small cubes
1 can (12 oz) SPAM® Lite, cut into small cubes
1 Tbs oil
1 Tbs fajita seasoning
2 pkgs (16 oz) refrigerated buttermilk biscuits, divided
1 jar (26 oz) spaghetti sauce
1 can (4 oz) mushrooms, drained
2 cups shredded Mexican blend cheese
1 cup shredded mozzarella cheese

Preheat oven to 375F. Spray bottom of 9"x13" pan with non-stick cooking spray. Cut SPAM® into approximately 1/4-inch cubes. Heat oil in a pan. Combine SPAM® and fajita seasoning, add to heated oil and cook until golden brown. While SPAM® is cooking, cut biscuits in half. Place half of the biscuits in the bottom of the prepared pan. (Note: They will not completely cover the bottom of the pan.) After SPAM® is cooked, add spaghetti sauce and mushrooms. Cook until sauce is warmed through. Place SPAM® mixture over biscuits. Sprinkle with cheese and top with remaining biscuits. Bake for 20-30 minutes or until golden brown and bubbly.
