The Great SPAM™ Cook-Off Island Style 2000



Frozen bread dough (one 24-piece bag of biscuits)
2 cans (12 oz) SPAM® Luncheon Meat (any variety)
2 medium potatoes, shredded (optional)
1 medium onion, finely chopped
salt
pepper
garlic salt
celery seed
oregano
1 can sauerkraut with juice
1 can (8 oz) mushrooms with juice
flour
2 cups shredded cheddar cheese

Place 12 frozen biscuits on a waxed paper covered cookie sheet. (Tip: Spray the paper with nonstick cooking spray so that the dough won't stick.) Let the dough rise until doubled in size. In large skillet, brown SPAM®, potatoes and onion until SPAM® is golden brown. Season to taste with seasonings. Add sauerkraut and mushrooms using 1/2 the juice of both. Heat and stir constantly until mixture is hot. Sprinkle flour on counter. With rolling pin, roll out the biscuits to about the size of a soft taco shell. Place shell on a cookie sheet. Place a spoonful of the mixture in the middle. Place desired amount of cheddar cheese on mixture then fold over and seal. (At this point it looks like a closed taco.) Continue until biscuits are all filled. Place cookie sheet in oven. Bake at 350F until runza starts to brown, about 5 minutes. Remove from oven, turn over and brown on other side, until cooked through.
